This is one of my favorite cheeses! I love sharp cheddar, but this is something totally unique and different. The jagged, brown rind makes a nice impression on a cheese plate, and it does have a nice, tangy, sharp cheddar taste, but the rind gives it an earthy punch. And it’s just right and not too strong, like Tomme or other some other natural rind cheeses can be.
