I have always bought this Adirondack Wicked Sharp cheese as I consider it one of the very best sharp cheddars. But this last one I just bought is soft, rubbery and missing that sharp bite that it always had before. If you have changed your recipe or aging process please consider changing it back. I found the last stick of Cabot Seriously Sharp was lacking in the very same way so it seems widespread over different companies. It’s not good whatever it is and I will be looking at different products. Someone recommended Old Croc instead. If you change your recipe back I will return as this has been my favorite cheddar for years!
