Raw Milk Cheeses
Raw milk cheeses are made from milk that has not been pasteurized or thermized. Raw milk cheeses are more typical in Europe, but all raw milk cheeses sold in America must be aged for at least 60 days by law, which limits the types of cheeses that can be produced in this method.
