Cheese Soufflé
This recipe originally appeared in our 2024 commemorative recipe booklet.
Cheese soufflé is a favorite dish in our house, and although it has a reputation for being difficult to make, this recipe has consistently given us good results.
We hope it works just as well for you, too!
Ingredients:
- 1/4 cup butter
- 1/4 cup all purpose flour
- 1 cup milk
- 8 ounces sharp cheddar, grated
- 4 eggs, separated
- 1/2 teaspoon salt
- 1 dash cayenne pepper
Steps:
- Preheat oven to 300°F. Melt butter in large pot on medium heat. Blend in flour, salt, and cayenne.
- Add milk all at once, stirring until mixture thickens and bubbles. Remove from heat. Add cheese, stirring until it melts.
- In separate bowl, use electric mixer to beat egg yolks until very thick and lemon-colored. Slowly add cheese mixture, stirring constantly, then cool slightly.
- In large bowl, beat egg whites to stiff peaks. Gradually pour in yolk mixture, and fold together well. Pour into ungreased 2-quart casserole dish.
- Trace a circle 1″ from the edge and 1″ deep. Bake for 75 minutes, or until knife comes out clean. Immediately break apart into 4 servings.
