May 18th is National Cheese Soufflé Day, and what better way to celebrate than by sharing our favorite (easy) recipe for cheese soufflé?

Cheese Soufflé

This recipe originally appeared in our 2024 commemorative recipe booklet.

Cheese soufflé is a favorite dish in our house, and although it has a reputation for being difficult to make, this recipe has consistently given us good results.

We hope it works just as well for you, too!

Ingredients:

  • 1/4 cup butter
  • 1/4 cup all purpose flour
  • 1 cup milk
  • 8 ounces sharp cheddar, grated
  • 4 eggs, separated
  • 1/2 teaspoon salt
  • 1 dash cayenne pepper

Steps:

  1. Preheat oven to 300°F. Melt butter in large pot on medium heat. Blend in flour, salt, and cayenne.
  2. Add milk all at once, stirring until mixture thickens and bubbles. Remove from heat. Add cheese, stirring until it melts.
  3. In separate bowl, use electric mixer to beat egg yolks until very thick and lemon-colored. Slowly add cheese mixture, stirring constantly, then cool slightly.
  4. In large bowl, beat egg whites to stiff peaks. Gradually pour in yolk mixture, and fold together well. Pour into ungreased 2-quart casserole dish.
  5. Trace a circle 1″ from the edge and 1″ deep. Bake for 75 minutes, or until knife comes out clean. Immediately break apart into 4 servings.
