Hard Cheeses
Hard cheeses are cheeses that are firm in texture. They tend to break apart and crumble when cut, and are often used for grating.
A cheese’s firmness is mainly a result of two factors: a cheese’s age and its moisture content. Aged cheeses with a low moisture content tend to be hard, such as Parmesan, Aged Cheddar, and Pecorino Romano.
