Bloomy Rind Cheeses
When soft-ripened cheeses have a fluffy, white mold covering them, they are described as having a bloomy rind. This rind is formed purposely on the cheese through the addition of Penicillium candidum, and is safe to eat, if desired, often having a grassy or mushroomy taste.
Famous bloomy rind cheeses include Brie, Camembert, and Pierre Robert.
